The Brownie Base
1 Egg
100g Greek Yogurt (I choose 0% to save calories)
Sweetener of choice (granulated)
The Icing
200g 0% Greek yogurt
Sweetener of choice (granulated)
Instructions
You'll need a 10 or 11 inch pan (square or round), I like square
Preheat your oven to 350°F
For the brownie base: Add pumpkin purée, greek yogurt, cocoa powder, protein powder, egg, sweetener and vanilla extract into a bowl. Mix until fully combined.
Press it into the bottom of your pan evenly so you no longer see the bottom of the pan.
Bake for 25-30 minutes, depending how firm you'd like the brownie to be (I like mine at 30 minutes).
For the icing: In a mixing bowl, while the brownie base is cooking, whisk together the Greek yogurt, protein powder, cocoa powder and sweetener.
Set in the fridge until the brownie base is ready.
As soon as the base is done, immediately Pour theicing over the crust (or directly into the same pan).
Refrigerate for at least 2 hours to set. Enjoy & please tag me when you make it :)
