Look no further! Introducing White Bean Chicken Chili β exactly what you've been craving. The best part is that you only need 20 minutes to prepare, and your crock-pot takes care of the rest!
Ingredients:
1 whole chopped onion
2-3 cloves minced garlic
1 can (14.5 oz) reduced-sodium chicken broth
1 jar salsa verde
1 can (14.5 oz) reduced-sodium diced tomatoes
1 can (4.5 oz) diced green chilies
1.5 tsp chili powder
1/2 tsp dried oregano
1 tsp ground cumin
1/2 tsp salt
2 cans (15 oz each) corn kernels, drained and rinsed
2 cans (15 oz each) white beans, cannellini, drained and rinsed
4 large organic chicken breasts (approx 2-2.5 pounds)
Making the Roux:
3 tbsp butter
3 tbsp almond flour
1/2 cup reduced-fat milk
4 oz Heavy whipping cream
1 tsp chicken bouillon
1 tsp black pepper
7 oz plain Greek yogurt (1 small container)
Instructions:
Place the 4 raw chicken breasts in the bottom of the crockpot, cover with all the spices, then add the remaining ingredients before the cream base roux.
Cook for 6-8 hours. One hour before serving, melt butter in a saucepan, whisk in flour, and allow it to bubble and brown for 3-5 minutes. Whisk in milk, cream, chicken bouillon, yogurt, and black pepper. Simmer for another 4-5 minutes.
Pour the roux mixture into the crockpot. Shred the chicken with two forks and let the sauce thicken while cooking on low for another hour. You can also shred the chicken over a pan or plate and return it to the crockpot
